Potato and zucchini roll

Always looking for new ways to serve vegetables, today I am cooking a delicious potato and zucchini roll .. a great success!

This is a really easy recipe, based on a potato crust filled with grilled zucchini, ham and stringy mozzarella cheese .. so delicious and really ITALIAN!

Cooking time: 20 minutes potatoes, 35 minutes roll
Difficulty: Easy

  • 700 grams of boiled and peeled potatoes
  • 3 zucchini
  • 2 egg yolks
  • 50 grams of grated parmesan cheese
  • 200 grams of cooked ham
  • 200 grams of mozzarella
  • extra virgin olive oil and salt as necessary
  • a few butter knobs

Preparation

Boil unpeeled potatoes in plenty of salted water. Drain and peel.

Mash potatoes and let cool.

Add the two egg yolks, Parmesan cheese, 2 tbsp of olive oil and season with salt.
Mix well, then spread the mixture over a flat pan lined with oiled parchment paper.

Wash and clean zucchini, dry and cut into thin slices, grill them and distribute over the potato base. Season with a little oil and sal.

Cut ham into slices and distribute over the zucchini: use the grater with large holes to cut mozzarella cheese and coat the ham.

Roll the potato layer helping with the parchment paper and close it well.

Season with few butter knobs and bake in the preheated oven (190°C) for about 30 minutes, until golden brown.

Let cool the potato and zucchini roll before cutting into thick slices .. and ENJOY!
